Résumé
Ce texte porte sur le travail des agents de la fonction publique territoriale qui sont impliqués dans les politiques publiques environnementales. Nous nous intéressons précisément aux agents et agentes de la restauration collective, autrement dit les cantines, et nous approchons leur travail par ce qu’en disent les annonces d’offres d’emploi. Nous cherchons à repérer dans ces annonces les différentes manières de travailler dans les cantines et comment s’y manifeste la transition écologique. De cette analyse, ressortent trois classes d’annonces d’offres d’emploi : celles où on ne cuisine pas, celles où on cuisine des produits de qualité écologique et celles où on cuisine des produits sans qualité écologique. Selon une approche conventionnaliste, nous caractérisons ensuite les types d’emplois et les conventions de qualité « civique », « domestique » et « industrielle » correspondant aux trois classes.

Abstract
This text focuses on the work of local public servants involved in environmental public policy. We are specifically interested in employees in institutional food service – that is, school canteens – and we examine their work through the lens of what job advertisements say about it. We seek to identify, within these advertisements, the different ways of working in canteens and how the ecological transition is reflected there. From this analysis, three classes of job advertisements emerge: those where no cooking is involved, those where people cook ecological quality products, and those where people cook products lacking ecological quality. Using a convention-based approach, we then characterize the types of jobs and the “civic,” “domestic,” and “industrial” quality conventions corresponding to these three classes.
